    Iced Strawberry Matcha Latte

    This easy iced strawberry matcha latte recipe is a refreshing matcha drink made with homemade strawberry purée, your milk of choice, and matcha powder.

    My oldest daughter is absolutely obsessed with this drink. So, she asked me to come up with a version we could make. The matcha lover in me was screaming with excitement- yes, yes! It turned out great, and we've been making it on repeat.

    Earthy matcha and creamy milk compliment the sweet and tangy flavor of the homemade strawberry syrup. Plus this drink is gorgeous! Serve this vibrant iced beverage with brunch pairings like brioche french toast, labneh and lox, or fluffy lemon blueberry pancakes.

    Ingredient Notes

    What is matcha? Matcha tea is finely ground green tea powder that mixes with hot water. Not all matcha powder is the same- I prefer ceremonial grade matcha powder over culinary grade matcha powder. Technically, ceremonial matcha is meant to be whisked with hot water and sipped down as-is. Culinary matcha is meant to be mixed in with milk or baked goods. Ceremonial matcha is more expensive and a more vibrant green color. In my opinion, ceremonial matcha tastes better.

    Milk of choice includes dairy milk, plant-based milks like oat milk, or nut milks like almond milk.

    How to Make an Iced Strawberry Matcha Latte

    Make the strawberry sauce. Add sliced fresh strawberries, granulated sugar, and water to a small saucepan. Bring to a boil and simmer for 10-13 minutes until the mixture thickens.

    Using an immersion blender, blend the homemade strawberry sauce until smooth. Set aside the strawberry puree to cool.

    Make a matcha shot. To avoid clumps, I sift my ceremonial matcha powder with a fine mesh strainer into a shaker glass.

    Add water and shake. You do not need to add hot water- room temperature water is just fine. Other ways to make a matcha shot are using a bamboo whisk or handheld electric whisk.

    To get the layered look, add the strawberry layer first, followed by ice cubes, your milk of choice, and the matcha layer on top.

    Store leftover strawberry sauce (optional).

    Leftover Strawberry Sauce

    This recipe may leave you with extra strawberry sauce. So, what can you do with the leftover strawberry sauce (besides make more iced strawberry matcha lattes, lol)? Make strawberry milk with leftover strawberry sauce! Just add one cup of your milk of choice and four tablespoons of the strawberry sauce. Mix and pour over ice.

    Traditional Matcha Preparation

    Traditional Japanese preparation uses a bamboo whisk and wide matcha bowl. Sift the powder into the bowl. Then, add a splash of warm water (about 175℉). Don't add boiling water because this makes the matcha bitter. Mix and make a paste. Add the remaining water using the bamboo whisk to froth the matcha.

    Homemade Strawberry Puree (Enough to Make Two Drinks)

    • 4 tablespoon granulated sugar see note 1
    • ¾ cup water
    • 7 fresh strawberries medium-sized

    Iced Strawberry Matcha Latte (Single Serving)

    • 4 tablespoon homemade strawberry puree make ahead
    • 1 cup milk of choice
    • 1 teaspoon matcha powder
    • ¼ cup water room temperature
    • ice enough to fill the glass

    Instructions

    • Make the homemade strawberry puree. In a saucepan, add sliced strawberries (remove the tops), sugar, and water. Bring to a boil and simmer for about 10-13 minutes until the strawberries break down and the mixture thickens. Using a hand immersion blender, blend the strawberry puree. Set aside to cool.
    • Make the matcha shot. Using a small mesh strainer, strain the matcha powder (this helps prevent clumping) into a shaker. Add water. Shake the matcha powder and water together.
    • Assemble the iced strawberry matcha latte. Add the strawberry puree to a large glass. Add ice and your milk of choice. Pour the matcha shot on top. Enjoy!

    1. The strawberry sauce can be prepared ahead of time. This recipe makes enough strawberry sauce for about 2 drinks. I store the remaining strawberry sauce in the fridge.
