Quick and Easy Pizza

Pizza is my favorite meal, even now as an adult. Growing up, my mother satisfied my pizza craving with a super simple pita bread pizza recipe using Lebanese pita bread. Several decades later, this is one of my daughter's favorite recipes. Now, as a mother, I see why this recipe is appealing. I always have frozen pita bread in the freezer, shredded mozzarella cheese in the fridge, and canned pizza sauce in the pantry. When a week gets insane, as it usually does, I have recipes like this to fall back on.

Also, pita bread pizzas are the perfect personal-sized pizza. One pita bread pizza serves one person, so everyone can have their pizza the way they want it. No arguing over toppings!

Ingredient Notes

ingredients shot for making pita pizzas

Lebanese pita bread: Pita bread is the perfect base for pizza. The key to a crispy thin crust pizza is to use thin Lebanese pita bread. Regular pita bread from the grocery store might be thick. If you can't find a thin pita, I recommend using naan bread (like this naan bread pizza) or pre-made pizza thin crusts (found in the pizza section at the grocery store) instead.

How To Make A Pita Bread Pizza

Heat the oven to 425 ℉ (218 ℃). On a parchment paper lined baking sheet, add pita bread. Slather on tomato sauce, shredded mozzarella cheese, and whatever toppings you like. Bake for about 10 minutes in the center of the oven.

Tips

  • Spread the sauce over the entire surface. The edges of the pita bread can burn more easily if they are not covered with sauce and cheese. So, go up to the edge of the bread of the pizza.
  • Keep an eye on the pizza. Oven temperatures can vary greatly, so keep an eye on the first pizza to make sure it doesn't burn or doesn't cook thoroughly.
  • Use parchment paper for easy cleanup.

Variations

  • Add a variety of toppings. Some topping ideas are sliced red onions, roasted garlic, sliced bell peppers, sliced mushrooms, fresh spinach, pepperoni, pineapple, sliced jalapenos, kalamata olives, red peppers, dried herbs, fresh herbs, fresh mozzarella, feta cheese, cheddar cheese, or shredded parmesan cheese. There are so many options!
  • Add some dry spices. Try sprinkling some red pepper flakes and dried Italian seasoning.
  • Try different sauces. Make your own homemade pizza sauce. Use store-bought pizza sauce or pasta sauce in a jar.
  • Cook the pita pizzas using a toaster oven, air fryer, or regular oven.
  • Try a different pizza base. Use gluten-free pita bread, pizza dough, manakish dough, naan bread pizza, whole wheat pita bread, large flour tortillas, or Greek pita bread.

This recipe is perfect!! I can’t have tomato and cow cheese, so instead I used olive oil pesto and goat cheese. I needed full 10 minutes with my oven, and the result was so good. Thank you so much for the recipe!!!
