Tarator is a tahini-based dressing or dipping sauce made with tahini paste, mashed garlic, lemon juice, chopped parsley, ground cumin, salt, and water.
Peel and cut the stem off of the garlic cloves. Mash the garlic into a paste using a mortar and pestle. Set the mashed garlic aside.
Wash the parsley. Remove the parsley leaves. Finely chop the parsley leaves. Set aside. Squeeze the lemons for fresh lemon juice.
In a small bowl, add the tahini paste, lemon juice, mashed garlic, salt, and ground cumin.
Mix all of the ingredients together.
Gradually add water to your desired consistency.
Mix in the chopped parsley. Serve this tarator sauce with grilled fish, fried cauliflower florets, or with fried falafel.
