Batata harra is made with cubed white potatoes, minced garlic, chopped cilantro, salt, black pepper, and frying oil.
Peel and boil the potatoes in salt water for 5 minutes. Finely mince the fresh garlic cloves with a chefs knife.
Wash and chop the fresh cilantro (coriander).
Heat the frying oil in a high-rimmed pot.
Cube the peeled potatoes. Slowly lower them into the hot oil.
Add the minced garlic and chopped cilantro one minute before removing the golden fried potatoes. Remove the potatoes onto a paper towel to soak up excess oil.
