Toasted Semolina Breakfast Porridge (Mamouniyeh)

This toasted semolina porridge is made with coarse or fine semolina (not semolina flour), sugar, milk, butter (or ghee), nuts, orange blossom water, and cinnamon.

Melt butter (or ghee) in a nonstick frying pan. Toast the nuts until golden brown. Set them aside for use later.

In a pot on medium-high heat, add sugar, water, and milk (if using). Heat until a simple syrup is formed. Add orange blossom water (if using).

Melt more butter (or ghee) in the frying pan. Toast the semolina in the same frying pan until it turns golden brown.

Pour the toasted semolina into the pot with the sugar-water mixture. Cook for about 7 to 8 minutes on medium-high heat until it thickens. Stir continuously.

While the pudding is hot, pour it into a bowl. Decorate with toasted nuts.
