Easy  Turkish Delight

Turkish delights are also known as raha in Syria and lokum in Turkey. They are chewy, sweet, and sticky bits of delicious goodness. Turkish delights are made with sugar, cornstarch, lemon juice, and water.

Add parchment paper to a small baking glass. Dust the paper with cornstarch.

In a small bowl or saucepan, add white sugar, water, and cornstarch. Mix until the cornstarch and sugar dissolve completely.

Bring the sugar mixture to a boil. Add the lemon juice, powdered sugar, and a little more water. Stir frequently over medium heat for about 30 minutes until it thickens.

Lightly oil a rubber spatula. Pour the mixture into the dusted parchment paper.

Spread the mixture into a one-inch thick layer. Let the Turkish delight mixture harden for a minimum of 4 hours in the fridge, but preferably overnight.

Once the mixture has a firmer texture, oil a knife. Cut the Turkish delights into one inch cubes. Dust the cubes with cornstarch.
