Easy Shakshuka Eggs

We love this one-skillet meal because it's whole30, made in less than 20 minutes, and full of flavor

Measure out the paprika, allspice, and cumin.

Peel and grate the potatoes. Set aside. Chop the tomatoes and onions. Finely mince the garlic.

In a nonstick pan heat up some olive oil. Fry the onions. Add the grated potatoes and spices and cook for 7 minutes or until soft. Add the tomato and tomato paste and cook another 4 minutes.  Crack the eggs on top.

Continue cooking until the egg white are cooked through. Serve with some fresh mint.
