Lotus Cheesecake

This no-bake lotus biscoff cheesecake is made with just six ingredients: biscoff cookies, butter, whipping cream, cream cheese, powdered sugar, and biscoff cookie butter.

Make the cookie crust by adding the biscoff cookies to a food processor.

Blitz until there are cookie crumbles. Set a few spoons aside for the topping later.

In a bowl, add the cookie crumbles and melted butter. You can also add some ground cinnamon (optional). Mix well.

Press the cookie mixture into a pie dish. Bake at 350 ℉ (175 ℃) for 8 minutes. Let the baked crust cool while preparing the filling.

In a bowl, whip the whipped cream until firm peaks form. Set aside.

Add the cookie butter, cream cheese, and powdered sugar to a bowl.

Using an electric mixer, combine until smooth.

Fold in the whipped cream using a spatula.

Pour the cream cheese mixture into the cooled cookie crust.

Heat some cookie butter in the microwave. Drizzle it on top.

Sprinkle some of the reserved cookie crumbles on top. Refrigerate for an hour to firm up.

If you don't refrigerate it, it will be a bit softer like this photo. Enjoy!
