Kibbet Batata  (Potato Kibbeh)

Kibbet batata, or potato kibbeh, is the vegan version of raw kibbeh (kibbeh nayeh).

Kibbet batata is an easy and simple recipe made with mashed potatoes, bulgar wheat, fresh parsley, green onions, dried mint, spices, and olive oil.

Soften the fine bulgar wheat by washing it and allowing it to absorb the water.

Wash, peel, and boil the potatoes. Then mash the potatoes while they're still a bit hot. Add the mashed potatoes to the softened bulgar wheat.

Chop the green onion and add it to the potato kibbeh mixture.

Add the fresh herbs and spices.

Knead everything together with your hands. Drizzle olive oil while you knead.
