Khyar bi laban, or cucumber yogurt, is made with yogurt, fresh mint, dried mint, garlic cloves, salt, and Persian cucumbers.
Add the garlic cloves and salt to a bowl.
Mash the garlic into a paste.
Finely chop the cucumbers.
Chop the fresh mint. Add the chopped mint, dried mint, garlic paste, and chopped cucumbers to the yogurt.
Mix well. Serve with kibbeh or mahshi kousa.
