Egyptian spinach uses mature fresh spinach leaves. The homemade tomato sauce is made from onions, garlic, and tomatoes.
Wash and chop the spinach. Set aside.
Blend the onions and garlic in a food processor.
Blend whole tomatoes in a blender.
Strain the blended tomatoes.
Fry the blended onion and garlic mixture in olive oil for about 5 minutes.
Add the strained tomatoes, salt, pepper, and a dash of sugar.
Cook on medium-high heat for 10 minutes covered.
Add the chopped spinach and cook for 10 minutes. Then, add the chopped cilantro and ground coriander. Cook for another 2 to 3 minutes.
