The Best Chicken Biryani Rice

This is the best Indian chicken biryani rice made with basmati rice, curry leaf, spices, ginger, garlic, marinated chicken, fresh mint, cilantro, toasted cashews, and golden raisins.

Make the chicken marinade by mixing the yogurt, garam masala, paprika, turmeric, biryani masala, and chili powder.

Add the chicken chunks and mix well. Let the chicken marinate for 15 minutes.

While the chicken is marinating, soak the basmati rice in water for 15 minutes.

Peel the ginger and garlic. Using a mortar and pestle mash the garlic and ginger together until pulverized.

Remove the curry leaves and set aside. Slice the red onion.

In a large pot on high heat, add some ghee. Fry the red onion, curry leaf, cinnamon stick, star anise, cardamom pods, and bay leaf.

Once the onion starts to soften, add the mashed garlic ginger paste, chili peppers, marinate chicken, and chopped tomatoes. Cook for 10 minutes.

Add the soaked basmati rice and water.

Once the water is level with the rice, turn the stove to low and cover.

Wash and chop the fresh mint and cilantro. 

Toast the golden raisins and cashews in the oven. Fry some onions in oil.

Add the chopped mint and cilantro to the rice and mix. 

Top the chicken biryani rice with the toasted cashews, golden raisins, and fried onions
