Butter Roasted Gold Potatoes

Butter roasted baby gold potatoes are a simple and delicious way to prepare baby Yukon gold potatoes in the oven. You can also use regular Yukon potatoes.

Wash and chop the Yukon baby gold potatoes into quarters. If using larger potatoes, chop into 1" cubes. Keep the skin on. Melt some butter.

Mix the melted butter and quartered Yukon gold potatoes in a bowl.

Heat the oven to 400℉ (205℃) convection. Add the quartered potatoes on a parchment paper lined baking sheet and sprinkle with salt.

Roast the potatoes for about 25 minutes or until tender. Sprinkle some dried herbs if desired.
