Description

This Greek Mediterranean quinoa salad recipe is hearty and delicious. It goes great as a standalone meal or side. It can be prepared ahead of time for the week.

Ingredients

  • 2 cups dry quinoa or 6 cups cooked quinoa
  • 4 cups cherry tomatoes
  • 6 Lebanese/Persian cucumbers or 1 English cucumber
  • 1 small red onion
  • 2 tbsp high-quality olive oil
  • 1 tbs dried oregano or fresh oregano
  • 3 ounces feta cheese
  • 20 olives – black or green
  • Salt and pepper to taste
  • 1 large lemon

Instructions

Cook Quinoa

  1. Cook quinoa ahead of time and allow it to cool. 

Chop Veggies

  1. Cut cherry tomatoes in half.
  2. Dice onion.
  3. Cut cucumbers into the same size as the tomatoes.
  4. Remove the olive pits and dice olives.
  5. Mix cucumbers, tomatoes, olives, and onion together in a bowl.

Make Dressing

  1. Squeeze lemon.
  2. Add olive oil, lemon, salt, pepper, oregano, and feta cheese together.
  3. Add dressing to the salad.
