Creamy Vitamix Chickpea Hummus (Easy & Authentic)

Description

Ultra creamy, smooth, and fluffy chickpea hummus made with a Vitamix blender within minutes. This is an easy and authentic hummus recipe!


Ingredients

Scale
  • 4 cans cooked chickpeas (8-ounce cans) OR 2 cups dried chickpeas (prior to soaking)
  • 2 whole lemons (about 2/3 cup of lemon juice)
  • 4 cloves garlic (mashed)
  • 8 tbsp tahini OR 8 tbsp of sesame seeds
  • salt to taste

Instructions

If Using Dried Chickpeas

  1. Let dry chickpeas soak in water overnight with a tsp of baking soda. If overnight is not possible, let soak for at least 3 hours.
  2. Boil the chickpeas until the outer skins are coming off.
  3. Drain chickpeas.

Make Ultra Creamy Hummus

  1. Juice the lemons. Peel and mash the garlic with a mortar and pestle.
  2. Add the garlic, lemon juice, tahini (if using), and cooked chickpeas to the food processor.
  3. Blend on high. 
  4. Scoop the hummus into the Vitamix blender. Add 1/2 cup to a cup of water (or chickpea juice from the can). Blend on high. If the blender is not blending, add a slight amount of water. Keep blending until the hummus is light and fluffy.
  5. Scoop the hummus into a bowl. Drizzle olive oil on top if desired.

Notes

  1. Either use tahini or sesame seeds. Don't use both.
  2. If using sesame seeds, you MUST use a Vitamix blender to fully blend the hummus.
  3. This hummus recipe can be made in a food processor (just won't be as fluffy and creamy). Make sure to use tahini if only blending with a food processor.
