Egyptian  Minced Molokhia

Egyptian molokhia is a leafy vegetable, jute, that's minced and added to a broth. It's topped with fried garlic and eaten with rice and roasted chicken.

This recipe uses frozen minced molokhia that can be found in Middle Eastern grocery stores.

Make homemade chicken broth by boiling a whole chicken with cardamom pods, onion, a bay leaf, and salt.

Strain the broth and set aside.

Split the boiled whole chicken into sections. Spread tomato paste, lime, salt, and pepper on the chicken.

Roast at 425 ℉ (220 ℃) until the skin is brown and crispy.
