Egyptian Koshari

Koshari is the national dish of Egypt. 

It's made of pasta, lentil rice, chickpeas, homemade tomato sauce, and fried onions.

Start by slicing the onions into circles. Coat them in flour then fry.

Set them aside.

Boil the chickpeas. While the chickpeas are cooking, make the fresh red sauce in a food processor.

Pulse until blended. Set aside.

Fry some blended onions in oil. Add the soaked lentils and boil for 5 minutes. Measure out the rice and more water and reduce the heat for 12 minutes.

Prepare the pasta as per the box. Make the vinegar red sauce by blending the tomatoes and straining. Fry the garlic and chili flakes. Add the strained tomatoes and spices.

Layer the koshari rice, pasta, and chickpeas.

Add the fresh red sauce, the spicy vinegar red sauce, and the fried onions.
