Cast Iron Skillet Pizza

Use store-bought pizza dough or make homemade pizza dough.  Homemade dough is made from quick-rise yeast, all-purpose flour, olive oil, sugar, salt, and water.

Proof the yeast. Warm the water to between 110 and 115℉ (takes about 45 seconds in the microwave).  Add the yeast and sugar to the water. Let the yeast get foamy (about 5 minutes).

In a stand mixer, mix the flour and salt. Add the yeast mixture. Pour in the olive oil. Change to a dough hook attachment and knead for about 8 minutes.

Or hand knead the dough.

The dough will be sticky. Rub olive oil on the outside and put it in a bowl.  Place plastic wrap and a damp cloth on top. Set it in a warm environment for a minimum of 2 hours.

Rub oil on the surface of the cast iron skillet. Sprinkle some corn meal on top. Place the pizza dough in the middle. 

Press the dough into the pan. It's elastic-like so it might take a few minutes.

Sprinkle shredded cheese.

Add pizza toppings and pizza sauce.

Put cast iron skillet pizza in a 425℉ oven for about 25 minutes.

Pull the pizza out. Add more shredded cheese and additional toppings. Bake again at 425 ℉ for another 15 minutes until the cheese is melted.
