Almond Milk  Rice Pudding

Almond milk rice pudding is a creamy vegan rice pudding made with almond milk, sugar, cornstarch, and cooked short grain rice.

Dissolve the sugar and cornstarch in a saucepan with almond milk.

Bring the saucepan to a boil, then reduce to medium heat. Continue whisking until the mixture thickens (about 10 to 15 minutes).

Add cooked short-grain rice to the almond milk and sugar mixture.

Continue cooking until the rice pudding thickens up (about 5 to 7 minutes). Let the rice pudding cool for 30 minutes. It will thicken further.
