Lebanese  Cheese Manakish 

Cheese manakish is made with shredded mozzarella cheese, shredded akkawi cheese, and homemade dough (or store-bought pizza dough).

Add the flour, active dry yeast, salt, and sugar in a bowl. Create a well in the middle. Add the egg, lukewarm water, milk, and vegetable oil.

Knead the dough by hand for 10 minutes. Wrap in plastic and let it rise for about an hour.

Heat the oven to 350 ℉ (180 ℃). Shred the cheeses into a bowl.

Divide the dough into equal sized balls.

Roll the dough balls into mini flatbreads.

Bake the flatbreads in the oven without cheese for 10 minutes.

Top with shredded cheese. Bake another 5 to 7 minutes until the cheese is melted.

Serve with tomatoes, olives, and fresh mint!
