Chunky Roasted  Pineapple Salsa

Chunky pineapple salsa is an easy roasted salsa recipe made with fresh ingredients. It's the perfect appetizer for weekend gatherings and game day.

Add the vegetable chunks to a parchment paper lined baking tray. I'm using tomatoes, anaheim pepper, onion, garlic cloves, and fresh pineapple.

Char the vegetables in a 425℉ (220℃) oven for about 15 minutes.

Let the vegetables cool. Squeeze the lime and remove the leaves from the cilantro. Add the roasted vegetables, pineapple, cilantro, cumin, lime juice, and salt to a food processor.

Blend on high until chunky.
