These fried cheese and za'atar spring rolls are quick, easy, vegetarian, and always a hit at any event. They are made with spring roll wrappers, shredded cheese, za'atar, and oil.
Spring roll wrappers should be found in the freezer or refrigerated section of your grocery store. They come in a variety of sizes. If frozen, thaw to room temperature prior to using for this recipe.
There are different types of za'atar spice, so use whatever you have available or prefer.
Many different types of shredded cheese can be used: mozzarella, akawi, halloumi, feta, or shelal cheese.
Add the cheese and za'atar spice at the bottom of a spring roll wrapper.
Fold the sides of the spring roll.
Roll tightly. Seal the spring roll by dipping your finger in water and rubbing on the spring roll wrapper.
Place the spring rolls seam side down while you finish rolling them all.
Heat up the frying oil. Gently lower the spring rolls into the hot oil.
Rotate the spring rolls until all sides are golden brown.
Using a slotted spoon, place the spring rolls onto a paper towel lined plate.
