Mujadara is a vegan Lebanese recipe made with blended lentils, rice, and onions. This version of mujadara has a texture similar to refried beans, and it's eaten with shredded cabbage salad and pita bread.
The main ingredient in this recipe is lentils. Use either brown or green lentils.
Boil the lentils in a large pot with water until tender (about 45 minutes).
Chop the onion. Rinse and drain the rice.
Fry the onions in oil until they start to caramelize.
Add the rinsed rice. Continue frying the onion and rice together for about 2 minutes.
Using a hand immersion blender, blend the lentils. Turn the stovetop to low heat.
Add the fried onions and rice. Cook on low heat covered until the rice is tender (about 30 minutes). Stir the lentils every 3 to 5 minutes so the rice doesn't stick on the bottom.
Add the ground allspice, ground cumin, and black pepper to the mujadara.
The mujadara is finished when the rice is tender and the consistency is similar to refried beans.
Serve with a shredded cabbage salad and pita bread.
