Homemade Pistachio Biscotti

This homemade cranberry pistachio biscotti is a great holiday biscotti, like Christmas, or every day biscotti to have with your morning coffee or tea.

Mix olive oil, sugar, and vanilla together. Add the eggs. Mix until fully incorporated.

In a second bowl, add the flour, salt, and baking powder. Mix together.

Add the dry ingredients to the wet ingredients.

Mix until a dough forms.

Add dried cranberries and shelled pistachios.

Mix well all together.

Wet your hands with water and form a biscotti log on a parchment paper lined baking sheet.

Bake at 300 ℉ (150 ℃) in the middle of the oven for about 40 minutes

Slice the biscotti log. Flip the biscotti pieces on their side.

Bake at 325 ℉ (160 ℃) in the middle of the oven for about 20 minutes
